Pickle Ranch

Ingredients:


Bubbie's pickles or other jar pickle juice.

1 cup raw cashews

1 bunch of fresh dill

1-2 tsps nutritional yeast

Sea salt to taste


Method:


  • Soak cashews in water in the fridge over night or if you don't have time put boiling water over them and let them sit on the counter for at least 2 hours.

  • Drain the cashews and place in a blender.

  • Add enough pickle liquid to cover the cashews (if you don't have enough add water).

  • Add the nutritional yeast--if you aren't a fan you can leave it out.

  • Chop up a handful of fresh dill and add it in.

  • Blend and taste. Add salt, pepper and nutritional yeast to taste.

  • If it is too thick, add more pickle water.


Store in the fridge


That's it!


This is a huge household favorite, it is great as a dip, a spread or a salad dressing. It is much healthier than traditional ranch and the Bubbie's pickles have actual live cultures in the liquid so they add the health benefits of fermented foods!
